Instructions for use
Tira fuori l’abanico dal frigorifero almeno 30 minuti prima della cottura per portarlo a temperatura ambiente
Tampona bene la carne con carta da cucina per eliminare l’umidità superficiale
Scalda una griglia, piastra o padella in ghisa a fiamma alta finché non diventa ben rovente. Non serve aggiungere olio
Cuoci il pezzo di carne per circa 2–3 minuti per lato, finché non si forma una crosticina dorata. Se il pezzo è spesso, scotta anche i bordi
Se hai un termometro da cucina, verifica che il cuore della carne sia intorno ai 55–60°C per una cottura media. In alternativa, controlla la consistenza: deve risultare morbida ma elastica
Togli dal fuoco e lascia riposare la carne per 2–3 minuti, coprendola leggermente con un foglio di alluminio
Affetta controfibra e servi con un pizzico di sale grosso o fiocchi di sale, pepe nero e, se vuoi, un filo d’olio extravergine o qualche goccia di limone

All products are delivered vacuum-packed: fillet, sirloin, arrosticini, rib-eye steaks, T-bone steaks, knife-point sausage, trotter, chicken, diaphragm and lamb can be stored in the refrigerator for 3 to 4 days.
Products that are delivered in trays such as tartare and mince can be stored in the fridge for 1/2 days, whereas bombette, ciocche and all side dishes can be stored for 2 days.
All products can be frozen with the exception of: arrosticini, lamb chops, polpette della nonna, guancetta, vitello tonnato and cannoli siciliani.
