DESCRIPTION

La Piemontese is one of Italy's main beef breeds, with a history stretching back tens of thousands of years. Nutrition of the Piedmontese breed is mainly from green fodder, cereals or local legumes.

Piedmontese beef is the most important lean meat par excellence, with a very low fat content (around 1%) and with a high nutritional quality.
If, generally, it is the fat that makes the meat tender, Fassona is the exception that confirms the rule, because the secret of its tenderness does not lie in the fat but in the particular conformation of the muscle tissue. The scarce presence of fat allows all the meat's scents to be fully perceived: an explosion of flavour that emerges with fullness in raw preparations and fast cooking at high temperatures.
