Chicken skewers

Instructions for use:

GRILLED CHICKEN SPEDINI WITH YOGHURT AND MINT SAUCE

Ingredients for 2 persons:

• 2 Mannarino chicken skewers (total weight approx. 260 g)
• 2 tablespoons of extra virgin olive oil
• 1 lemon
• Salt and black pepper to taste
• 150 g Greek yoghurt
• 1 bunch of fresh mint

Procedure:

1. Fire up the grill and let it warm up well. Meanwhile, prepare the marinade for the chicken skewers: in a small bowl, mix the juice of half a lemon, 2 tablespoons of extra virgin olive oil, salt and black pepper.
2. Brush the marinade on both chicken skewers of the Mannarino and place them on a hot grill, either a grill pan or a grill (but a frying pan will also do). Cook the skewers for about 10-12 minutes, turning them occasionally.
3. Meanwhile, prepare the yoghurt and mint sauce: in a small bowl mix the Greek yoghurt, the juice of half a lemon, a few finely chopped fresh mint leaves and a pinch of salt.
4. Serve the chicken skewers hot accompanied by the yoghurt and mint sauce.
